Dr. Nurul Huda currently act as Malaysian-based Independent Researcher. The research interest of Dr. Nurul Huda is focused on Food Science and Technology. Dr. Nurul Huda earned his PhD from the Food Science Programme, Universiti Kebangsaan Malaysia, in 2001. He was former Associate Professor at Faculty of Sustainable Agriculture Universiti Malaysia Sabah (2022-2024), Faculty of Food Science and Nutrition, Universiti Malaysia Sabah (2018-2022), School of Food Industry, Universiti Sultan Zainal Abidin, Malaysia (2016-2018), Food Technology Program, Universiti Sains Malaysia, (2005-2016) and Faculty of Fisheries, Universitas Bung Hatta, Padang, Indonesia (1991 – 2004).
Besides formal education, Dr. Nurul Huda also actively participates in many training or short courses such as the International Training Course on Chinese Modern Techniques for Food Analysis at China Meat Research Centre, Beijing, China (2001), the International Training Course of Application of Biotechnology in Food Industries at China National Research Institute of Food and Fermentation Industries, Beijing, China (2005), Meat Processing Training Course at Bristol University, Langford, UK (2008), the 7th Asia Surimi School organized by Oregon State University and Suranaree University of Technology (2008), and the Smoked Seafood for Fun and Profit Workshop at the University of Alaska Fairbanks, Kodiak, Alaska, US (2012), among many others.
Dr. Nurul Huda has been involved in many research grants related to Food Science and Technology. He has published more than 300 publications with an H-index of 27 in Web of Science, 36 in Scopus and 49 in Google Scholar. Besides journal publications, Dr. Nurul Huda actively shares his experience in many conferences, invited lectures, and webinars nationally and internationally. In terms of student supervision, he has successfully supervised more than 80 BSc students, 19 MSc students, 8 PhD students, and 1 postdoc student. He is also actively invited as an examiner for more than 60 MSc/PhD theses, nationally and internationally. Due to his achievements in teaching, research, and publication, Dr. Nurul Huda was awarded the Excellence Service Award from Universiti Sains Malaysia, Universiti Sultan Zainal Abidin Malaysia, and Universiti Malaysia Sabah. Dr. Nurul Huda was also listed as one of the World's Top 2% Scientists by Stanford University in 2022 and 2024.
